Today’s recipe is the crown of the kitchen. Elena’s ‘Corona,’ as it is referred to, is fit for a king and most definitely a Christmas special for any dinner party you are hosting this year. This rack of lamb perfectly formed in the shape of a crown not only takes centre stage on your dining table but tastes divine.

For approx. 12 people


  • 5 kilos of rack of lamb formed in the shape of a crown. Tell your butcher to get this ready for you.
  • 750 gr. mayonnaise
  • X2 sachets of onion soup
  • salt and pepper according to taste
  • water


Once the butcher has tied up and formed the crown of lamb, place it in an oven dish. In a bowl, mix the mayonnaise and onion soup together to form a sauce and add your salt and pepper. Spread the sauce over the lamb and cover it with silver foil. Add 2 cm of water at the base of your oven dish then place it at the lower level of your oven at 200 °c – cook for approx. 4 hours. Exact cooking time varies from oven to oven so check throughout.
