A great recipe to enjoy your beef in a really tasty way. Served hot or cold in tortilla bread George’s roasted ribeye is always a hit!
Serves approx.: 10 people
- 2 ½ /3kilos ribeye
- 2tbsp pepper corns
- 2 cloves garlic
- 1 tbsp. fresh rosemary cut into small pieces
- 1 tbsp. fresh thyme
- 2 tbsp. olive oil
Preheat oven to 250°. Put a tbsp. olive oil in a big pan and sear meat on all sides. Put the meat in a roasting tray and cover the remaining oil onto it. Crush the peppercorns with the garlic and mix in the salt before sprinkling over the meat. Place it uncovered in the oven for 30 minutes. Lower temperature to 150° and continue cooking for 45 minutes or until your meat thermometer shows 55 for medium rare or 65 for medium. Have in mind when you take it out of the oven it will continue cooking for another 10 minutes. Allow to rest for at least 30 minutes before slicing.
Serve in tortilla wraps with garnish of your choice
